Esta receta es una variación entre el guiso de origen español (mi bisabuela -iaia- era catalana) y el potaje yucateco de ahí la adición de las albóndigas.

  1. 1/2 kg. carne molida de cerdo
  2. 2 huevos
  3. 1/4 kg alubias (o garbanzos o frijol canario) remojados y cocidos
  4. 3 jitomates (tomate rojo)

  7. 1 cda pimentón dulce
  8. acelgas o espinacas
  9. 2 papas peladas en cuartos (Se le puede poner también jamón, tocino, chorizo, salchichas o butifarras)
  10. pimienta
  11. 3 cdts consomé en polvo o sal

  1. Las alubias remojadas se cuecen con las tres cucharaditas de consomé o sal y una cucharada de Royal -polvo de hornear- para que se cuezan más pronto.
  2. (Puede hacerse con garbanzos o con frijol flor de mayo, carita, bayo o canario).
  3. En un sartén se hace un refrito de tocino picadito, jitomate picado, cebolla y ajo picado y las acelgas o espinacas lavadas y picadas.
  4. Ya que dio una vuelta se le pone una cucharada de pimentón dulce (paprika) -no hay que dejarlo mucho tiempo friéndose pues se pone negro y amarga el guiso- se le agrega el refrito a las alubias cocidas, se añaden las papas peladas y partidas en cuartos.
  5. Se le pueden agregar salchichas o butifarras y jamón, esto es al gusto.
  6. Por separado se prepara la carne molida para hacer las albóndigas: se le pone una rebanada de pan remojado en leche y un huevo crudo revuelto con sal y pimienta, se van haciendo las albóndigas poniéndoles un pedacito de huevo duro en medio y se van soltando en el caldo de las alubias.
  7. Se deja cocer todo junto, se sirve en platos hondos. Si se sirve con arroz blanco al lado es el acompañante perfecto.
